Most home cooks, if we’re honest with ourselves, are looking for a silver-bullet approach to cooking. For my mother, in the 1970s, that silver bullet was sealed in a package of Old El Paso Taco Seasoning Mix. Every week we’d beg her for taco night, which in central Massachusetts lived firmly in the territory of “not understanding Mexican cuisine”: beef, sautéed with onions and no chiles, all of it doused with the contents of the magic packet, then tucked into tooth-breakingly hard taco shells.

Salsa wasn’t really a thing we had in the house. Cilantro wasn’t an herb I met until college. But now, as an adult, I can see that those packets paved the path to salvation for Mom. She was wrangling three kids while working a mix of odd jobs, aiming to still get dinner on the table by 6. Old El Paso could compensate for a number of sins, including the fact that the “healthy vegetable side” was the crisp Boston lettuce she’d chop, frantically, and pour into the shells.

It was a 10-minute dinner, and I don’t judge. Not by a mile. I live above a pizza place in Brooklyn, and most days that I can’t wrangle a home-cooked meal end in a happy slice. But recently I’ve discovered a shortcut right in the Old El Paso vein. It’s called Green Goddess Dressing, a thing that—until I made it—I thought was hippie-ish, and probably entailed blitzing kale in with a mess of other good-for-you things.

Untrue. Green goddess dressing is perhaps the most flexible of kitchen players, one able to swallow up all manner of leftover bits and bobs from the fridge, and something I wish I’d discovered 20 years ago. It’s a marinade. It’s a dressing. It’s sauce. It’s salsa. (It’s a bird! It’s a plane!) And it can accommodate whichever soft fresh herbs you have. Really. Read that again. If you have cilantro, great. Parsley, love it. Basil, gorgeous. If you don’t have the lime the following recipe calls for, use a lemon.

It goes like this: Blitz the ingredients together in a high-powered blender. Set aside a portion for sauce. Another, spiked with hot sauce like Tabasco, for salsa. Use the bulk of it for a chicken or pork marinade. Use that salsa that night, on leftover sautéed sausages, extra pork, or leftover beef tucked into soft corn taco shells with avocado, raw onion, and cilantro. Start marinating a big pack of chicken for tomorrow. The next day, shake off the dressing and roast the bejesus out of that chicken. Serve it with more of the reserved dressing. (Just be sure not to re-use the marinade on food you serve, which isn’t safe.)

Got extra dressing you haven’t used in a marinade? Use it on kale, and massage it into the leaves. Maybe plop pulled pieces of the new fresh batch of chicken on it, for chicken salad.

Makes a cup and a half to two cups

2 garlic cloves, peeled

1½ cups plain yogurt or buttermilk (plus more, to taste)

1 cup packed basil, cilantro, tarragon, or parsley leaves

¼ cup packed chives (optional)

2 anchovy fillets (optional) or fish sauce, to taste

1 scallion, white and green parts

Finely grated zest and juice of 1 lime or ½ lemon

2 tsp. coarse kosher salt

1 tsp. black pepper

Puree all ingredients in a high-powered blender until very smooth. Adjust for salt, pepper, citrus, and texture. Add more buttermilk or yogurt, if desired. Use for marinade, salad dressing, or sauces.

Grandpa's Dying Wish to See His Beloved Dog One Last Time Granted by Hospital

Saying goodbye is never easy, especially during those last precious moments in life when you yearn to tell the people — and animals — you care about just how much they’ve meant to you.

Sadly, this was the bittersweet scenario faced by Peter Robson of Elswick, Newcastle, U.K. Robson, who was suffering from fibrosis of the lungs, and was hoping for any comforts from home. BBC.com reports the 70-year-old terminally ill grandfather’s only dying wish was for the staff of Ninewells Hospital in Dundee, Scotland, to allow his dog, a border collie named Shep, to visit him last Thursday.

“He was a doting granddad to 35 grandchildren and five kids of his own,” Robson’s granddaughter Ashley Stevens tells PEOPLE. “Him and Shep became best friends. My granddad got him as a companion after my gran passed away nine years ago. We got Shep the year later, to give him company.”

Robson’s family tells the BBC that the hospital staff made “a dying man very happy” by accepting a pet visitor on the premises. Animals are only granted entry to the medical facility “under exceptional circumstances” due to infection control regulations, and his family had given up hope that this wish would be granted. Now, they say they’re “eternally grateful” for the hospital staff’s sensitivity and the heartwarming opportunity they provided for him.

Stevens took to Facebook to express her family’s gratitude to the NHS staff.

“Absolutely amazed and touched today from NHS Ninewells Hospital,” wrote Stevens in a March 29 post. “Our grandad’s last and final wish was to see his dog one more time. Still in shock that the wish was granted and they went above and beyond today and made a dying man very happy. Cheryl Whyte charge nurse of Ward 3 you are an absolute angel and we are all eternally grateful.”

Stevens went on to say, “You don’t know what this meant to our granddad. I’ll let these moments do the talking, thank you NHS. Please share this everyone needs to know what amazing nurses and staff they have in that hospital.”

The hospital responded in kind on Facebook:

“Our condolences Ashley and the rest of your family for the loss of your grandfather, we hope that this visit has brought a little bit of comfort to you at this difficult time … We are so proud of our fantastic staff in Ward 3 and infection control at Ninewells for making this happen. Thank you for taking the time to share this, I know Cheryl and the team really appreciate it.”

Stevens tells PEOPLE that her grandfather “was always out with his dog … that’s all he loved to do.” And it appears that Shep felt the same way about his master.

“He was being taken to the dog groomers and my auntie passed my granddad’s street,” Stevens wrote in a message to PEOPLE. “He barked so much because she didn’t turn into his street to take him home.”

Luckily Shep is now being taken care of by Stevens’ grandfather’s son, also named Peter, she says.

Despite all the tears from the past week, Stevens only has happy memories of her beloved granddad. “He was always laughing and joking, always had a smile on his face,” Stevens tells PEOPLE. “And right up until the end, that’s how he remained.”

I Finally Figured Out How to Make the Crispiest, Crunchiest Chickpeas—And They’re Seriously Good on Everything

These oven-baked chickpeas are great on soups, salads, and grain bowls—or for munching on by the handful.

Crispy chickpeas are one of those things you either need to nail, or it’s a total disappointment. Almost crispy chickpeas just don’t cut it. In my opinion, they need to be golden and crispy and salty and crunchy—as in, so crunchy I disrupt others around me when I bite into them—and I need to be able to achieve that every single time.

Until recently, my results were inconsistent. My best attempts came from pan-frying, but I was determined to find a method that required less oil. After a fair amount of research and a lot of chickpea taste tests, I’m confident I’ve discovered the best, most reliable method there is. Here’s how to make crispy oven-baked chickpeas:

1. Preheat the oven to 450°F and place a rimmed baking sheet in the oven while it preheats. I've found this to be the ideal oven temperature because it’s hot, but not so scorching hot it will burn the outsides of the chickpeas without cooking the insides. Pre-heating the baking sheet ensures the chickpeas crisp as soon as they hit the hot pan.

2. Drain and rinse a 15.5 oz. can of chickpeas, then pat very dry with paper towels. Any residual moisture will cause the chickpeas to steam instead of crisp.

3. When they’re dry, toss the chickpeas with 1 tablespoon olive oil and ¼ teaspoon each kosher salt and freshly-ground black pepper. Carefully remove the baking sheet from the oven, place the chickpeas on in an even layer, and return to the oven. Roast, shaking the pan halfway through, until crispy, 20 to 25 minutes. If you want, try switching up the seasonings—smoked paprika is a great option for spicy food lovers.

Now for the best part—eating them!! They're addictive as is (you'll find yourself eating them by the handful off the baking sheet), but they can also be used anywhere you'd want a crouton or something crunchy. Try them on salads or soups, paired with roasted veggies (just cook the veggies in the oven alongside them, rotating the baking sheets halfway through), or as a topper to a grain bowl. Most recently, I paired them with roasted cauliflower, a lemon-y kale salad, and a punchy tahini dressing. Dee-lish. Just be sure to eat them right away—they'll soften as they sit.

Are You Close Friends—or Are You Having an Emotional Affair? Here’s How to Tell

It’s an age-old debate: Can men and women really just be best friends—or are they bound to fall for one another eventually? The answer changes depending on who you ask. And complicating the question even more is the fact that a romantic relationship needn't be physical to be real. Hence the increasingly popular term “emotional affair.”

So what is an emotional affair exactly? According to Kenneth Rosenberg, PhD, author of the new book Infidelity: Why Men and Women Cheat ($26, amazon.com), an emotional affair occurs between two people who share a mutual attraction and a deep, loving relationship that does not involve sex.

If that definition feels uncomfortably familiar, read on for four red flags that a friendship has crossed the line.

You're being secretive

The telltale sign of an emotional affair? “There’s no way in hell you’d tell your primary partner about the relationship,” says Rosenberg. That doesn’t necessarily mean your S.O. doesn’t know you’re close with this other person; they just might not realize the extent of the friendship. “We all keep secrets from our partners and we might even have relationships that we might not tell them much about, but if it’s a relationship where you know there’s some sexual tension and you keep it from your partner, that’s a sign you’re in troubled waters,” says Rosenberg. That brings us to our next point.

The tension is palpable

“In an emotional affair, sex is not on the table but is generally under the table,” writes Rosenberg in his book. Translation: You aren’t hooking up, but a desire to is felt on both sides. And it's more than just a fleeting attraction. “Sexual tension is par for the course in flirtation,” says Rosenberg. “But this type [of tension] is more intense.”

You may find yourself fantasizing about your emotional fling while you’re having sex with your primary partner, or thinking to yourself, "If only we could have sex without being unfaithful…." The main point is that you feel enough intimacy or sexual chemistry to get it on with this other person—and you wish you could.

You complain about your partner

That's a risky move, says Rosenberg: “[You're] implicitly saying to your emotional affair partner, ‘You’re so much better than my partner, it’s so easy to talk to you, I feel like I can tell you anything,’” says Rosenberg. When you rag on your main squeeze to this other person, you’re “casting your own partner in a very negative light, and idolizing your emotional affair partner,” he explains.

Your new bond undermines your old bond

“What you often have in the beginning of an emotional affair is similar to what you have in any physical affair or normal relationship,” says Rosenberg. “Everything is positive, there's free-flowing, unconditional love and acceptance.” That can feel like a huge relief, especially if you're simultaneously dealing with any of the issues or resentments that commonly arise in long-term relationships.

While it's great to feel super-positive about a close friendship, that new thrill—if it's kept secret and accompanied by sexual attraction—can undermine your romantic relationship, warns Rosenberg. Things can get even more precarious when your emotional affair partner starts learning things about you that your romantic partner doesn't know.

How to stop an emotional affair

Before you beat yourself up, know this: “Affairs—physical, emotional, and virtual—happen, and the desire for an affair is just part of the human experience,” says Rosenberg. “The desire for another is pretty common, especially when you get into the ups and downs of a relationship with your romantic partner.”

That said, “you want to nip [an emotional affair] in the bud, because it’s only going to grow if you don’t," Rosenberg warns.

The first step is to become aware that it’s even happening. (After all, it’s easy to convince yourself you aren’t doing anything wrong when there’s no sex involved.) Once you own it, talk about it. Let your emotional affair partner know that the relationship needs to cool off, and reach out to friends for support. "The more you bring this relationship into the open so it’s not secretive, the better.”

Talking to a mental health professional may be helpful too, says Rosenberg: “A therapist can say, 'I understand how you can love person X and want to have sex with person Y, but this is a bad idea and it isn’t consistent with your values or what you want in life." Reality check received.
